This is Rondo, a small-format bloomy-rind goat cheese from Andante Dairy in Petaluma, California, Soyoung Scanlan's much-loved little disc.
It's pasteurized goat's milk aged just a few weeks, so the rind wrinkles up with that pretty geotrichum brain and the paste stays fresh and bright inside. Cut into one and you see the classic centripetal picture, a soft cream line right under the rind moving toward a chalky, cakey core when young. Left at room temperature it softens and the mushroomy note from the rind starts to pull through the paste. Flavor is elegant more than assertive, clean lactic tang up front like fresh yogurt, then a gentle vegetal, forest-floor pull from the rind on the finish. Very little goaty funk, no bite, just fresh cream and a whisper of mushroom.
Andante's small-format cheeses are hand-made in tiny batches and Rondo is the little one to reach for when you want something delicate and pretty on the board that still has real character.
