Amatrice Pecorino Sottobosco is an aged sheep's milk cheese from Amatrice in Lazio, infused with black truffle and aged for a minimum of six months in cool, humid cellars. Sottobosco means "undergrowth," and that's exactly where this one lives.
The paste is firm and crumbly, a pale straw color streaked with dark ribbons of black truffle running through it. On the palate the sweet, tangy notes of aged sheep's milk come first, then the truffle pulls in from underneath with a deep, forest-floor earthiness that lingers well past the swallow. The six months of cellar aging give it a savory depth that ties the two together, so the truffle reads as part of the cheese rather than something added on top.
Shave it over fresh pasta or set it on a board with a little truffle honey and fresh figs. It rewards a slower pour of Chianti or a glass of Champagne to lift the richness.
