From Austria, Amadeus is a young cow's milk cheese aged for about four months. In that time, the paste sets into a pliable, semi-soft slab that yields easily under the knife, holding its shape on the board but bending soft against the tongue. The rind keeps the inside protected through the aging cellar, so the paste stays smooth and even, with a faint cream-line just under the surface. On the palate you get a clean buttery character first, the kind of mild lactic note that reads close to fresh cream. A quiet nutty whisper builds in the middle, pulled out of the slow four-month rest. The finish is short and tidy, fading without weight and leaving the palate clean for the next bite.
