Brebirousse d'Argental is a soft-ripened sheep's milk cheese from Lyon, France, with a bright orange annatto-coated bloomy rind that gives it its name (brebis means sheep, rousse means red).
The paste is creamy and buttery, with a soft cream line right under the rind and a slightly chalkier core when it's young. Flavor is gentle and tangy, with the lactic pull of fresh sheep's milk on the front of the tongue and a clean, milky finish. The annatto rind looks intense but tastes mild, adding a soft mushroomy note that rounds out the buttery paste.
When we have it nice and ripe, it sits right in the sweet spot, super buttery, super tangy, and a really approachable way into sheep's milk for anyone who thinks they only like cow.
Creamy and soft-ripened, the paste runs slightly at room temperature with a buttery cream line right under the orange rind.
Gentle and approachable, leaning buttery and tangy with the soft lactic pull of sheep's milk, never sharp.
A clean, short finish, the buttery cream fades quickly and leaves a faint lanolin sweetness on the palate.
Very milky and yogurty up front, the fresh-cream tang of sheep's milk carries the whole bite.
A subtle nuttiness sits behind the cream, more browned-butter than toasted hazelnut.
Light mushroomy note from the bloomy rind, mostly fresh-grass and clean cellar rather than barnyard.
No piquancy at all, this is a soft sheep cheese built around butter and tang, not heat.
Bloomy rind
The orange annatto-coated bloomy rind is edible and mild, contributing a soft mushroomy note that balances the buttery paste underneath.
Brebirousse d'Argental stands on its own, but the right partners turn a wedge into a moment. Regional pairings first — they were built for each other.

Bright sparkling and crisp whites cut the high butterfat of the sheep's milk paste, while a light Beaujolais or dry rosé matches the gentle tang without overwhelming the cheese.

Dom calls out fresh fruit, especially raspberries, as his go-to with these cream-added soft cheeses. Light honey and quince echo the buttery sweetness without burying the lactic tang.

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.
Ordered several cheeses from them and the wrong items were delivered. Contacted the store and they recognized the error and immediately sent the correct order the next day without any fuss. Really appreciate the promptness and professionalism.
