Cavatina is a small, bloomy-rinded goat's milk cheese from Andante Dairy in Petaluma, California, where Soyoung Scanlan makes a tiny, music-inspired lineup of soft cheeses by hand. The wheels are little, just over five ounces, with a delicate snow-white rind that ripens from the outside in.
The paste is soft and cakey when young, with a clean, lactic core that creams up under the rind as the cheese ages. You get fresh cultured butter and yogurty tang on the front of the tongue, then a soft mushroomy lift from the bloomy rind, and a clean finish that fades into milky sweetness. It is goat-forward but gentle, more about freshness and elegance than barnyard.
This is one of those small-format cheeses where condition is everything. Eaten at room temperature, just barely runny under the rind, with a chalkier line still holding the middle, it is right in the sweet spot. A real ambassador for what American soft goat cheese can be when somebody is paying close attention.
