Ubriaco del Piave is an Italian cow's milk cheese from the Piave region that gets its name from being "drunk" or soaked in red wine during its aging process. It develops a distinctive rind with grape remnants, nutty, savory, and subtly sweet with fruity undertones from the wine., and a semi-hard to firm texture. The cheese is traditionally made by farmers who preserve it by soaking it in fermenting wine must and aging it for several months.
