"La Pinetta" (often referred to simply as Pinetta) is an Italian blue-veined goat cheese produced by the affineur (cheese ager) Andrea Magi of De' Magi. Made from pasteurized goat's milk, it has a sweet, creamy, and delicate taste with an average saltiness and a high persistence on the palate. It is barely pungent and releases subtle aromas of goat and barn, combined with notes of dried porcini mushrooms and woodland undergrowth.
The cheese is matured for at least three months in natural stone caves, which provides a natural temperature and humidity for aging. The rind is covered with a layer of natural mold, and the interior paste is a soft, ivory white with greenish (rather than typically blue) marbling. It is considered a "meditation cheese" and can be enjoyed on its own, as an aperitif or appetizer, or incorporated into various dishes like risotto, fresh pasta fillings, or sauces.
