The term Paccheri comes from the ancient Greek first founders of Parthènope and is still used in the Italian language as “pacca”, or a slap given with an open hand, without hostile intentions. Hence the name of the type of pasta, much larger than normal in size, usually accompanied by tasty condiments.
The Paccheri IGP of the Pastificio dei Campi di Gragnano are much loved because, in addition to being longer than normal, they hold up to cooking extraordinarily well.
