Mixed pasta (in Neapolitan ammescat ) is something profoundly Neapolitan, still unknown in some areas. Its origins lie in the tradition of recycling, when housewives would put together a meal using leftovers of various types of pasta that for some reason remained unused, perhaps because they were too few when eaten individually. It is made up of seven different pasta shapes, characterized by their full body and—in some shapes—ridged texture. Compared to other versions, it is better suited to legumes with a lingering flavor or to fattier, heartier soups.
