Guanciale is a traditional Italian cured pork product made from the jowl (or cheek) of the pig. It's known for its high fat content, rich flavor, and slightly smoky taste. Unlike pancetta, which is made from the pig's belly, guanciale is cured and aged for several months after being rubbed with salt, pepper, and sometimes other spices.  Guanciale is a staple ingredient in dishes like Spaghetti alla Carbonara and Pasta all'Amatriciana.
