A Traditional Italian Fish Sauce: Colatura di Alici is the modern Italian descendant of garum, an ancient Roman fish sauce. It has been produced for centuries in the small fishing village of Cetara on the Amalfi Coast of Italy. The sauce is a transparent, amber-colored liquid obtained through a slow maturation and fermentation process. Freshly caught anchovies from the Gulf of Salerno are eviscerated, layered in small chestnut wood barrels (terzigni) with Sicilian sea salt, and weighted down with stones. The liquid that slowly drips out under pressure after 18 to 30 months of aging is the prized colatura. It offers a potent, rich, and intensely savory umami flavor—a concentrated essence of the sea. It is wonderfully briny, complex, and a powerful flavor enhancer, often described as more mellow and savory than Asian fish sauces.
