Dalmatinac is a semi-firm mixed-milk cheese from Croatia, specifically from the island of Pag. It is made from a blend of cow's milk (about 90%) and sheep's milk (about 10%) from the island's native breeds. The cheese is known for its buttery, nutty, and herbal flavors with a salty finish, reflecting the island's unique environment where the animals graze on sparse vegetation and sea salt.
