Casolare Scamorza Bianca is an Italian semi-soft, white, stretched-curd cow's milk cheese. It is similar to mozzarella but has a firmer, drier texture, less moisture, and a slightly more piquant and milky flavor. It has a characteristic pear or teardrop shape, formed by tying a string around the top third of the cheese and hanging it to dry, a process that earned it the name "scamorza," which in southern Italian dialect means "beheaded". The "bianca" (white) variety is fresh and unsmoked. It has a firm, elastic, and stringy texture and a delicate, slightly sweet, milky flavor with a mild lactic tang. It's a versatile melting cheese, perfect for cooking in baked pasta dishes, lasagna, and pizzas, or it can be enjoyed sliced on its own as a table cheese or in salads.
