Casolare Caciocavallo Fresco is a type of fresh, semi-soft Italian stretched-curd (pasta filata) cheese made from cow's milk. The name "fresco" means "fresh" in Italian, distinguishing it from aged varieties of Caciocavallo. Like all Caciocavallo, it originates from Southern Italy, particularly regions such as Campania and Sicily.  It is a stretched-curd cheese, similar to mozzarella and provolone, known for its elastic and stringy texture. It has a mild, delicate, and aromatic flavor with lactic and slightly tangy sweet notes, and a subtle aftertaste of fresh butter.  Due to its mild taste and excellent melting properties, it can be enjoyed on its own, sliced in sandwiches, melted in baked dishes, or cut into thick slices and fried like halloumi cheese.
