Cave-aged Gruyère AOP from Switzerland, aged in natural caves where the cool, humid air slowly draws out a deeper version of what makes Gruyère great in the first place.
The paste is firm and dense, pale straw in color, and breaks into clean slabs under the knife with small crystalline pockets scattered through. On the palate it leads with toasted hazelnut and brown butter and finishes long with a quiet sweetness underneath. The extra time in the cave is what you taste, more concentration, more savory pull, a little more crunch from the crystals as the paste tightens.
This is the version of Gruyère for someone who already knows the style and wants the aged-up tier, where the nuttiness deepens and the finish stretches out well past the swallow.
Firm and dense, breaks into clean slabs under the knife with small crystalline pockets that give a satisfying crunch against the teeth.
Bold and savory through the middle, with the deeper concentration that comes from the extra time in the cave. Nutty and rich without tipping into sharp.
Long savory pull that lingers past the swallow, brown butter and toasted nut sitting on the back of the palate.
The fresh milk character has mostly dried down with the age, leaving a quiet buttery undertone rather than a milky front.
Toasted hazelnut and brown butter run through the paste, with a roasted, almost earthy depth that builds across the bite.
A clean cave note sits underneath the nuttiness, picking up the cool humidity of the aging room without going barnyard.
No real heat or piquancy, just a faint savory tug at the very back.
Natural rind
Gruyère stands on its own, but the right partners turn a wedge into a moment. Regional pairings first — they were built for each other.

The nutty, savory depth of cave-aged Gruyère wants either bright acidity to cut the fat or a nutty oxidative wine to echo the flavor. Champagne and Riesling handle the first job, dry sherry and Pinot Noir the second.

Pears and apples give a clean crunch against the firm paste, and a thread of honey or fig jam answers the natural sweetness inside the cheese.

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.
Ordered several cheeses from them and the wrong items were delivered. Contacted the store and they recognized the error and immediately sent the correct order the next day without any fuss. Really appreciate the promptness and professionalism.
