Deep Dive

A closer look

P'tit Basque is a pasteurized sheep's milk cheese from the Basque Country in France, named for the little wheel format that made it easy to carry down from the mountains. The paste is pale ivory, smooth and semi-hard, with the distinctive basket-weave pattern pressed into its natural rind, a nod to the wicker molds these cheeses would have traditionally been made in.

Aged for about 70 days, it sits right in that sweet spot where sheep's milk still reads sweet and creamy rather than sharp. On the palate it's gentle and buttery up front, with a soft toasted-almond pull through the middle and a clean, short finish. The texture slices beautifully, firm enough to hold its shape but with enough give to feel supple rather than dry.

This is a really approachable sheep's milk cheese, mild enough for someone who isn't sure how they feel about brebis yet, but with enough nutty character to keep things interesting. Just because it's mild doesn't mean it's not flavorful.

The Tasting Notes

Texture

Semi-hard and smooth, slices cleanly without crumbling. The paste is supple and even, firm enough to hold its shape on a board but still gives a little under the knife.

Intensity

Gentle and easygoing, a mild sheep's milk cheese that leads with sweet cream and a soft nutty pull. Just because it's mild doesn't mean it's not flavorful.

Finish

A clean, short finish, sweet cream and a touch of toasted nut that fades within a few seconds and asks for another bite.

Lactic

A soft, buttery lactic note runs through the paste, more cream than tang, the way young sheep's milk cheeses tend to read.

Nutty

Quiet toasted-nut character through the middle, almond and a hint of brown butter, never aggressive.

Earthy

Very little earthiness, the natural basket-weave rind stays mellow and the paste reads clean and dairy-forward.

Spicy

No real piquancy, this is a gentle cheese with no peppery bite at all.

The Rind

Natural rind

Natural rind with the distinctive crosshatch basket-weave pattern, firm and inedible for most, mostly there to protect the paste during its short aging.

The Pairing

What to pour. What to put alongside.

P'tit Basque stands on its own, but the right partners turn a wedge into a moment. Regional pairings first — they were built for each other.

Basque txakoli and a light Rioja echo the cheese's home region, while a dry rosé or cider lifts the sweet, nutty paste without overpowering it.

Sheep's milk loves dark fruit, so cherry preserves and quince paste are the classic Basque move, with honey and Marconas leaning into the nutty side.

Like wine tasting, but for cheese

Absolutely loved the cheese store! Everyone was super helpful and friendly. Lena helped us — she was very knowledgeable on all the cheeses: where they came from, what the region is like, what they are known for. It was like wine tasting for cheese.

Excellent customer service on a shipped order

Ordered several cheeses from them and the wrong items were delivered. Contacted the store and they recognized the error and immediately sent the correct order the next day without any fuss. Really appreciate the promptness and professionalism.
