Ridge’s story begins on Monte Bello Ridge in the Santa Cruz Mountains. In 1885, a San Francisco doctor named Osea Perrone planted vines there at about 2,300 feet. In 1959, four engineers from the Stanford Research Institute bought the property and revived it, and they released their first Monte Bello Cabernet Sauvignon in 1962. Under longtime winemaker Paul Draper, Ridge became known for traditional, minimal-intervention winemaking that lets each vineyard speak. In 1976, the 1971 Monte Bello took part in the famous Judgment of Paris tasting against top Bordeaux, and in the 30th-anniversary rematch in 2006, judges ranked it first. In 1991 Ridge added its Lytton Springs estate in Sonoma County’s Dry Creek Valley. The winery brings the same care for place and purity to this oil, made from Arbosana olives grown in California. Arbosana is a variety from Catalonia in Spain, known for oil that is green and lively, often with notes of fresh grass, green almond and a gentle peppery finish.
