The vines are the “Golden” biotype, Aligoté Doré, an old, low-yielding selection that is rarely found outside Burgundy. Grahm gives the fruit a hands-off treatment and bottles it unfiltered under screwcap at a moderate 12% alcohol. The result is a lively, transparent white with lemon peel, white blossoms and a hint of green apple. Its bright acidity and long, clean finish make it a natural match for sushi, crudo and delicate white fish.
