Michel Cazes founded the house in 1895, and brothers André and Bernard Cazes later built it into one of the region’s leading estates. In the late 1990s the family began converting its vineyards to biodynamic farming, and today all 220 hectares are farmed organically and biodynamically. This wine is 100% Macabeo (Macabeu in Catalan and Viura in Spain), a white grape at home on both sides of the Pyrenees and long part of Roussillon’s sun-drenched vineyards. The grapes are picked by hand and made like a red wine: destemmed, then left on their skins for one to two weeks before pressing. The wine then rests for several months in oak, and no sulfur is added. The result is a textured, savory orange wine with bergamot, bitter orange peel, kumquat and dried fruit, a hint of clove and tea, and a dry, gently grippy finish.
