Cut into one and you see the classic centripetal picture, a soft cream line right under the rind moving toward a chalky, cakey core when young. Left at room temperature it softens and the mushroomy note from the rind starts to pull through the paste. Flavor is elegant more than assertive, clean lactic tang up front like fresh yogurt, then a gentle vegetal, forest-floor pull from the rind on the finish.
